Oatmeal Power Protein Muffins

I'm always doing 'to go' quickie, heat and eat, easy storage type breakfast fast bites.  Especially for the pre teen.  I mean these days a pre teen is the equivalent of a independent, opinionated scary activist anymore.  As well flippant on their likes.  One week she is eating pork, next week she is vegan, blah blah blah.  As for me I just want a no mess healthy bite for that commute to work and the hubby has a thing with Orange Theory Fitness in which after every class I get the "look, look, I'm flexing" forced to look stance when he bounces in the door after a rigorous workout.  Voila some Oatmeal Muffins.  These just happen to be made with oatmeal by power protein body builder Toni Julian.  This oatmeal power punch is equivalent to the protein of 5 egg whites, fiber of 2 pieces of whole grain bread, 1 serving of fruit and Omega 3 healthy fats!

 Oatmeal Power Protein Muffins

  • 1 cup of milk
  • 1/2 cup of maple syrup or agave
  • tsp vanilla or almond extract if want a bit of extra flavor, optional.
  • 1.5 cups of oats or your fave flavored, or like Toni's Oatmeal which you can order online here.
  • 1 cup of crunchy granola to enhance flavor/texture if wish.  If not then use 2.5 cups of your fave flavored or high protein oatmeal.
  • 1/2 tsp baking powder.  
  • NOTE:  add 2 eggs, I did not because of the equivalency of egg white in Toni's Oatmeal.  
Fill your pre cooking sprayed cupcake tins with liners 3/4 the way up.
Add berries or whatever fruit you like and bake for 25 minutes on 350.  
Store in a air tight container and pull and zap for 15 seconds or so up to 5 days in the refrigerator.
