Harrissa Butternut Squash with Quinoa
I am all about fast and easy. This was a nice veg meal packed with protein and fall flavors. If vegan can throw in some tofu or if veg maybe boiled eggs as a protein.. Super simple.
- Prepare quinoa as you normally would. I toasted a cup of quinoa then added 1.5 cups of water to a boil. I also added a bit of harissa infused olive oil to the water.
- Peel and bake your butternut squash. Pumpkin could be used also or any winter squash. Toss with harissa when done.
