Harrissa Butternut Squash with Quinoa
I am all about fast and easy.  This was a nice veg meal packed with protein and fall flavors.  If vegan can throw in some tofu or if veg maybe boiled eggs as a protein..  Super simple.
  • Prepare quinoa as you normally would.  I toasted a cup of quinoa then added 1.5 cups of water to a boil.  I also added a bit of harissa infused olive oil to the water.
  • Peel and bake your butternut squash.  Pumpkin could be used also or any winter squash.  Toss with harissa when done.
Mix all together for a great hearty veg or vegan meal.  I also threw in a roasted red pepper for a bit of bitey sweetness.
